I really like taco and burrito bowls and wanted to make something at home that was quick and easy. My husband and I really like how this turned out! Spoon into bowls and top with sour cream, crushed tortilla chips, lettuce, etc.
Ingredients
- 1 tablespoon vegetable oil
- 1 pound ground beef
- 1 tablespoon fajita seasoning
- 1 can pinto beans , 15 ounce
- 1 jar salsa , 8 ounce
- 1 cup cooked brown rice
- 0.5 cups shredded Mexican cheese blend

Heat oil in a large skillet over medium-high heat. Cook and stir beef in hot oil until browned and crumbly, 5 to 10 minutes; drain and discard grease. Stir in fajita seasoning until ground beef is evenly coated.

Add pinto beans, salsa, and brown rice to ground beef mixture; mix until well combined. Top with Mexican cheese blend.
