Made with red cabbage, green bell pepper, and tomato, this recipe is almost as colorful as Dolly Parton's song "Coat of Many Colors."
Ingredients
- 1 medium head red cabbage
- 1 medium green bell pepper
- 1 medium onion
- 1 cup mayonnaise
- 0.5 cups cider vinegar
- 0.5 cups powdered sugar
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 large tomato
Instructions

Combine cabbage, green pepper, and onion in a large bowl. In a small bowl, whisk together mayonnaise, vinegar, powdered sugar, salt, and black pepper until smooth. Pour dressing over vegetables, tossing well to combine. Cover and chill at least 2 hours to allow everything to marinate.

When ready to serve, gently stir in tomato and season to taste with additional salt and pepper. (Chill, covered, up to 5 days.)

These icebox pickles are a wonderful sweet pickle recipe I got from my mother, who got it from a relative, who got it from a relative, and so on. It is very easy, a little time-consuming, delicious, and makes a lot of pickles. The recipe says to put them in jars, but I just store them in a clean gallon-sized ice cream bucket. Will keep in the refrigerator for up to a year.
