This Cornish hen recipe is my fiancé's favorite slow cooker meal, served with veggies over wild rice. For a larger portion, simply split the hens lengthwise after cooking to serve four.
Ingredients
- 2 Cornishs game hens
- 1 can golden mushroom soup , 10.5 ounce
- 2 cups chopped baby portobello mushrooms
- 1 large zucchini , chopped
- 1 jar pimento-stuffed green olives , 7 ounce
- 1 teaspoon garlic salt

Coat hens with about 1/4 mushroom soup.

Combine remaining 3/4 mushroom soup, portobello mushrooms, zucchini, olives, and garlic salt in a bowl; stuff mixture inside hens. Arrange hens, breast-sides up, in a slow cooker. Spoon any remaining soup mixture over hens.

Cover slow cooker. Cook on High for 4 hours.
