Vegan Strawberry Gelato
This vegan strawberry gelato is what resulted when I had a new gelato machine to play with and soymilk left over from a recipe. Mix needs to be refrigerated for several hours before churning, so allow time.
Skillet Meatballs
These skillet meatballs are tender on the inside and have a neutral taste, so they can be used any way you like —in pasta, soup, sandwiches, or as appetizers.
Creamy White Chicken Enchiladas
These enchiladas freeze beautifully and are fast to make. I like cooking the chicken breasts in my Instant Pot, although a rotisserie chicken can be used for even faster recipe prep.
