Velvety mashed potatoes made with sour cream and chives! Scallions also work well if you do not have chives on hand.
Ingredients
- 2 pounds Yukon Gold potatoes , peeled and quartered
- 0.5 cups milk
- 0.5 cups sour cream
- 0.25 cups chopped fresh chives
- salt and pepper to taste

Place potatoes in a large pot with enough water to cover 2 inches from the bottom. Bring to a boil. Cook potatoes in boiling water until fork tender, 20 to 25 minutes. Drain and mash well.

Using a potato masher or an electric mixer, mix milk into mashed potatoes until fluffy. Stir in sour cream and chives until incorporated. Season with salt and pepper.

This homemade chicken cacciatore, Sicilian-style recipe was shown to me by my Sicilian employer years ago in Lynchburg, VA. It is made from scratch with tomatoes, onions, peppers, wine, and seasonings. Do not cook chicken before adding to this recipe; it must all blend together to get this particular flavor. Leaving the skin on the chicken helps the flavors to blend together while cooking. You can remove the skin after cooking.
