Air Fryer Hearts of Palm Sticks
I'd never seen a recipe for air fryer hearts of palm sticks but I'd seen artichoke hearts and mozzarella sticks fried in the air fryer, so I thought...why not? What a pleasant surprise! They take on the look of mozzarella sticks but have a tangy, meaty texture in the center. I serve them with marinara sauce for dipping, and ranch salad dressing would also be great.
Sweet Corn Gazpacho
This sweet corn gazpacho is a no-cook, chilled sweet corn soup perfect for hot summer days. Its texture is silky and creamy using fresh, peak-season summer produce.
Creamy and Crunchy Tuna Salad Supreme
This tuna and cream cheese salad is made special with the addition of cream cheese and chopped raw carrots. Red peppers make it pretty, and one or two other vegetables, fruits, or nuts keep it changing and interesting. I developed this recipe after tasting cream cheese in a salmon salad sandwich at a funeral lunch in Canada many years ago. Add baby spinach or lettuce leaves, and serve on your favorite bread or as a wrap in a tortilla.
