I was trying to use up our plum harvest and became inspired to try and make a wholesome version of a pineapple upside-down cake using plums.
Ingredients
- 1 cup rolled oats
- 0.5 cups boiling water
- 1 cup brown sugar
- 0.5 cups butter , softened
- 0.5 cups white sugar
- 2 eggs , room temperature
- 1.5 teaspoons vanilla extract
- 1.5 cups whole wheat flour
- 1.5 teaspoons baking soda
- 1 teaspoon ground cinnamon
- 1 teaspoon ground nutmeg
- 0.5 teaspoons sea salt
- 0.25 teaspoons ground allspice
- 2 tablespoons butter
- 0.25 cups raw sugar
- 0.25 teaspoons ground cinnamon , or more to taste
- 1.5 cups diced plums
Instructions
-
1
Preheat the oven to 350 degrees F (175 degrees C).
-
2
Combine oats and water in a medium bowl. Let sit for 20 minutes.
-
3
Combine brown sugar, 1/2 cup butter, white sugar, eggs, and vanilla extract in a large bowl. Add oatmeal mixture and mix until combined.
-
4
Sift flour, baking soda, 1 teaspoon cinnamon, nutmeg, salt, and allspice together in a bowl. Add to oatmeal mixture.
-
5
Place 2 tablespoons butter in a 9-inch square baking pan and melt in the preheated oven. Remove from the oven and sprinkle sugar and cinnamon on top. Sprinkle plums evenly over sugar. Pour batter over plums and spread evenly.
-
6
Bake in the preheated oven until a toothpick inserted in the center comes out clean, about 50 minutes.

Grandma Skeet's Prune Kolaches
This is a Czech Pastry my Grandma use to make with a homemade prune filling and streusel topping. I changed it a little so I could use the bread machine. They are worth the hard work!
Pani Popo (Hawaiian Coconut Bread)
Delicious Hawaiian bread that anyone will love--even those who don't like coconut! Eat it for dessert or with any meat hot off the grill. Tastes great warm or cool.
Kim's Buttermilk Spice Cake
This spice cake was inspired by a recipe from one of my mom's old cookbooks. It was my great-grandpa's favorite cake, and I used to make it for him all the time. It's a simple cake that's not too sweet, and has a rather strong spice flavor. Err on the side of underbaking the cake rather than overbaking, or it'll be dry.
