Great Spanish rice as a main course meal. I usually serve it with mashed potatoes. Can be made less spicy using regular tomatoes.
Ingredients
- 3 tablespoons butter
- 1 cup long-grain converted rice
- 1 green bell pepper , diced
- 1 onion , diced
- 1 pound ground beef
- 2 cans tomato sauce , 15 ounce
- 1 can diced tomatoes with green chilies , 14.5 ounce
Instructions
-
1
Melt butter in a skillet over medium heat. Cook and stir rice in the melted butter until rice is lightly browned, 3 to 4 minutes. Stir bell pepper and onion into rice and cook until bell pepper is softened and onion is translucent, 5 to 8 minutes.

2
Break the ground beef into the rice mixture; cook and stir until beef is completely browned, 8 to 10 minutes. Stir tomato sauce and diced tomatoes into ground beef mixture. Cover, reduce heat, and simmer until rice is tender and liquid is absorbed, about 20 minutes.

This is a wonderful Southern peach cobbler recipe... very easy and tastes great!
Jim Beam Yule Nog
Add a festive flair to the day by whipping up a bourbon eggnog cocktail that tastes just like the holidays. Rich, creamy eggnog is the base of this tasty treat. Jim Beam Bourbon adds a slightly spicy note while the sweetness comes from rich butterscotch-flavored liqueur. Sprinkle with cinnamon for a present that doesn't need unwrapping.
Egg-Free and Milk-Free Baked Oatmeal
A milk-free variation of baked oatmeal with no eggs. Great if you do not keep eggs around or are looking for a vegan version of this classic. It's also not too sweet, with less than 1 cup sugar total.
