Lemon-Raspberry Cupcakes
In this lemon-raspberry cupcake recipe, fresh raspberries pair with plenty of lemony flavor and make for an awesome summertime cupcake! This recipe makes a lot of frosting — plenty to frost 15 cupcakes generously and then some — but it freezes well and would make a great sugar cookie topping, too!
Plum Flummery
This plum flummery recipe makes a delicious fruity mousse with a great plum tang. It makes good use of pre-stewed plums, and is especially handy at that time of the year when you have too many plums and quite enough jam, thank you very much! Most of the time it takes to make this recipe is waiting for it to chill sufficiently.
Coconut-Lime Cupcakes
This is a combination/variation on my coconut and lemon cake recipes. It goes great with mango-lime filling and coconut cream cheese frosting.
