Tuna Noodle Casserole with Mushrooms
If you're looking for a tuna noodle casserole, try this easy recipe with fresh mushrooms, peas, and corn. You can use any kind of pasta or cheese you like. I tend to serve this with a salad and maybe some garlic bread.
Loaded Cauliflower Chicken Casserole
The idea for this delicious casserole comes from a steakhouse "loaded" baked potato! Roasted cauliflower stands in for the potato, and some leftover cooked chicken is added for protein. Topped with Cheddar cheese, chopped green onions, and cooked, crumbled bacon, this dish was devoured by the family.
