This spicy tomato chutney recipe is best made with garden-fresh tomatoes. It's spicy and sweet — ginger, garlic, chili powder, and curry paste are just a few of the flavors in this tomato chutney.
Ingredients
- 4 pounds ripe tomatoes
- 1 piece fresh ginger root , 1-inch
- 3 cloves garlic
- 1.75 cups white sugar
- 1 cup red wine vinegar
- 2 onions , diced
- 0.25 cups golden raisins
- 1 tablespoon curry paste
- 2 teaspoons mixed spice
- 1 teaspoon chili powder
- 1 pinch paprika

Fill a large saucepan with water and bring to a boil. Place tomatoes in boiling water and cook until skins begin to crack and peel, 3 to 5 minutes. Remove from water, let cool, and peel.

Purée peeled tomatoes with ginger and garlic in a food processor or blender.

Pour tomato mixture into a large saucepan; add sugar, vinegar, onions, and raisins. Season with curry paste, mixed spice, chili powder, and paprika. Simmer over medium heat until thickened, about 30 minutes. Refrigerate until ready to use.
