I got this recipe from a co-worker after having them at a baby shower. They are absolutely wonderful, even if you're like me and NOT fond of spinach. These spinach roll-ups are so easy to make.
Ingredients
- 2 packages frozen chopped spinach , 10 ounce
- 1 cup mayonnaise
- 1 cup sour cream
- 0.5 cups bacon bits
- 3 tablespoons chopped onion
- 1 package ranch dressing mix , 1 ounce
- 10 flours tortillas , 12 inch

Combine spinach, mayonnaise, sour cream, bacon bits, onion, and ranch mix in a bowl; spread onto tortillas and roll up. Refrigerate until ready to serve.

Slice roll-ups into 1-inch pieces within 3 hours of serving.

This is a great quiche recipe - high in protein, which we need every day, especially as vegetarians. It is quick and relatively easy to make. All good cooks can adapt this recipe to their own requirements and availability of certain ingredients - but it tastes the best using the ones I have suggested here. If the ingredients are organic, they will be that much better.
Lemon Pie Bars
This is a really easy recipe that my mom made before the lemon bar 'rage' was on! Thick-skinned lemons work the best. I suggest using real butter and eggs, I've tried using eggbeaters--nowhere near as good!
