This warm spinach salad with bacon dressing is a classic restaurant-style dish. It looks and tastes like a lot of work, but can be prepared in no time!
Ingredients
- 1 bag baby spinach leaves , 10 ounce
- 10 ounces Swiss cheese , shredded
- 4 hard-cooked eggs , peeled and sliced
- 1 cup sliced mushrooms
- 4 stripss crisply cooked bacon , crumbled
- 0.5 cups toasted sliced almonds
- 1 tablespoon olive oil
- 1 large shallot , minced
- 1 teaspoon garlic , minced
- 0.33 cups white wine vinegar
- 0.33 cups Dijon mustard
- 0.33 cups honey
- 2 stripss crisply cooked bacon , crumbled
- salt and pepper to taste

Place spinach into a large serving bowl; top with Swiss cheese, hard-cooked eggs, mushrooms, 4 crumbled strips of bacon, and almonds.

Heat olive oil in a small skillet over medium heat. Stir in shallots and garlic; cook and stir until shallots are softened, about 2 minutes. Whisk in vinegar, Dijon mustard, honey, and 2 crumbled strips of bacon until heated through; season to taste with salt and pepper.

Pour hot dressing over spinach and toss to coat.

Sweet fruit is wonderfully accented by the tangy salad dressing. Add leftover cooked chicken or turkey and you've got a wonderful main dish salad.
Gluten-Free Chicken Pasta Salad
This recipe is perfect if you have IBS and have to be careful with what food goes into your body. Every ingredient in the recipe falls under the Low FODMAP foods. I have to eat gluten free, so I made my own version of pasta salad. I start with a whole box or bag, 12 or 14 ounces, of gluten-free pasta. This recipe can also be cut in half if you would like. Fully Loaded Deviled Eggs
My children and husband go nuts over these deviled eggs with sour cream. I made them for a potluck at work and have been asked for them ever since. (If you can keep people away from them, you're doing better than I ever could.) The time I spend prepping this depends on how fast you shell your eggs. I have two girls, so we knock this out in about 30 minutes (minus cooking time).
