I made this recipe for cheesy spinach-stuffed mushrooms for a bridal shower. They're easy to make and have a great flavor thanks to three types of cheese, garlic, and spinach. Everyone enjoyed them!
Ingredients
- 0.25 cups olive oil
- 30 large whole fresh mushrooms , stems removed
- 1 large egg
- 1 teaspoon minced garlic
- salt and ground black pepper to taste
- 1 package frozen chopped spinach , 10 ounce
- 0.5 cups grated Parmesan cheese , divided
- 0.25 cups shredded Gouda cheese
- 0.25 cups shredded mozzarella cheese
- 0.25 cups dry bread crumbs
Instructions
-
1
Preheat the oven to 375 degrees F (190 degrees C).
-
2
Lightly grease 30 muffin cups with olive oil. Brush all sides mushrooms with remaining olive oil; place gill-sides-up into the prepared muffin cups.
-
3
Bake in the preheated oven until mushrooms just tender, about 12 minutes.
-
4
Meanwhile, beat egg, garlic, salt, and black pepper together in a bowl; stir in spinach, 1/4 cup Parmesan cheese, Gouda cheese, mozzarella cheese, and bread crumbs until evenly combined.
-
5
Remove mushrooms from oven; drain and discard any accumulated juice. Fill mushroom caps with spinach mixture; return to the muffin cups. Sprinkle mushrooms with remaining 1/4 cup Parmesan cheese.
-
6
Bake until stuffing is hot and golden brown, about 10 minutes.

Chef John's Rustic Italian Cornbread
I created this Italian cornbread recipe after speaking with my mother, Pauline. She told me about a bread she used to eat at her grandmother's house. She said it was one of her favorites — a basic Italian bread with some cornmeal in it. I love to play food detective, so I took her description and went to work. I believe this is pretty close to what she remembers, and even if it's a bit off, it was still delicious.
Tomato Pie
This savory tomato pie has layers of juicy, ripe sliced tomatoes, cheese, bacon, and fresh basil! It's so delicious and perfect for summer.
Greek Feta and Spinach Potato Casserole
If you like potato gratins and casseroles, try this unique Greek-inspired recipe. The herbaceous flavor of mint and spinach pairs well with the rich flavor of baked feta cheese.
