This sun-dried tomato pesto is easy to make in a food processor or blender. It tastes fabulous on pasta, pizza, and sandwiches.
Ingredients
- 4 ounces sun-dried tomatoes
- 0.25 cups chopped pine nuts
- 3 tablespoons chopped onion
- 2 tablespoons chopped fresh basil
- 2 tablespoons chopped fresh parsley
- 1 tablespoon chopped garlic
- 0.33 cups crushed tomatoes
- 0.25 cups balsamic vinegar
- 0.25 cups red wine
- 1 tablespoon tomato paste
- 0.5 cups olive oil
- 0.5 cups grated Parmesan cheese
- salt to taste

Place sun-dried tomatoes in a bowl and cover with warm water for 5 minutes, or until tender.

Place sun-dried tomatoes, pine nuts, onion, basil, parsley, and garlic in a food processor or blender; process until well blended. Add crushed tomatoes, vinegar, red wine, and tomato paste; blend to desired consistency. Stir in olive oil and Parmesan cheese; season to taste.
