Coronation Chicken
Coronation chicken is a British creamy chicken and mango salad with a spicy curried mayonnaise dressing. It is something fresh and different that always brings interest and recipe requests. Serve cold with a crisp garden or rice salad. This also makes a wonderful sandwich filling.
Smoked Sausage with Spaghetti Squash
Microwaving the spaghetti squash ensures hands-off steaming while you cook the rest of tonight's dinner in a single skillet. If your microwave-safe dish can only hold one squash half at a time, steam it in two batches.
Egg White Breakfast Bites
These low-calorie, low-fat egg white bites make a quick weekday breakfast and they're equally as convenient for midday snacks. In order not to waste egg yolks and to save time, I like to use a carton of liquid egg whites. Egg whites tend to be rubbery, so adding in the cottage cheese helps make them creamier. You can store extras in the freezer and reheat as needed.
