This sweet rhubarb crisp recipe proves that rhubarb can be sweet!
Ingredients
- 1 cup all-purpose flour
- 1 cup brown sugar
- 0.75 cups old-fashioned oats
- 0.5 cups butter , melted
- 1 teaspoon ground cinnamon
- 4 cups chopped rhubarb

Preheat the oven to 350 degrees F (175 degrees C).

Combine flour, brown sugar, oats, melted butter, and cinnamon in a medium bowl until crumbly; press into the bottom of a 9-inch square baking dish. Spread rhubarb in an even layer over crust.

Combine water, white sugar, cornstarch, and vanilla in a small saucepan over medium-low heat; cook, stirring occasionally, until thick and clear, 5 to 10 minutes. Drizzle sauce over rhubarb.

Bake in the preheated oven until topping is set, about 1 hour.
