Fresh pineapple sprinkled with Tajin is one of my favorite snacks. I also love grilled pineapple, so I combined the two ideas in this recipe — the result is delicious! If you like things extra spicy, feel free to use Tajin Habanero.
Ingredients
- 1 tablespoon olive oil
- 1 fresh pineapple
- 1 tablespoon chili-lime seasoning , such as Tajin
Instructions
-
1
Preheat an outdoor grill for medium-high heat and lightly oil the grate.
-
2
Cut top and bottom off pineapple with a sharp knife; cut lengthwise into 8 wedges. Cut off peel; remove core.
-
3
Cook pineapple wedges on the preheated grill until grill marks appear, 2 to 3 minutes per side. Sprinkle chili-lime seasoning on pineapple wedges; serve.

Peach Cobbler Coffee Cake
If you're looking for a fun way to use up a few ripe, summer peaches and happen to enjoy having cake for breakfast, this peach cobbler coffee cake recipe is for you. Fresh peach slices are simmered on the stovetop with brown sugar and cinnamon to form a gooey peach cobbler-style filling that you'll layer into rich sour cream coffee cake batter. The cake is then capped with an iconic cinnamon-sugar pecan crumble topping before baking into a coffee cake that's too good not to share. And you'll have plenty to go around, as this decadently dense, moist 9x13-inch coffee cake is perfect for a crowd.
Overnight Matzo Bake
This is a Passover-friendly take on a breakfast noodle kugel! We often eat kugel with raisins and cinnamon. I chose to use raisins, dried apples, and dried apricots. Kugels are usually very dense and have a ton of sour cream and cottage cheese/cream cheese in them. I added just a bit of sour cream to keep things a bit lighter.
Classy Lemon Drop Martini
This lemon drop martini's ingredients include limoncello, lemonade, and vodka. It is my signature martini recipe — classic and refreshing!
