This Texas caviar features black-eyed peas, black beans, and chopped vegetables marinated in a fiery, flavorful dressing. Great with tortilla chips or bread — and plenty of cold iced tea!

Ingredients

  • 1 pint cherry tomatoes , quartered
  • 1 can black-eyed peas , 15 ounce
  • 1 can black beans , 15 ounce
  • 1 bottle zesty Italian dressing , 8 ounce
  • 1 green bell pepper , chopped
  • 0.5 onion , chopped
  • 1 bunch green onions , chopped
  • 2 jalapenos peppers , chopped
  • 1 tablespoon minced garlic
  • 0.5 teaspoons ground coriander
  • 1 bunch chopped fresh cilantro , or to taste

Instructions

    Mix together tomatoes, black-eyed peas, black beans, Italian dressing, bell pepper, onion, green onions, jalapeño peppers, garlic, and coriander in a large bowl. Cover and chill salad in the refrigerator for about 2 hours.

    Toss salad with desired amount of cilantro to serve.

I couldn't find one, so I submitted my own. This is an easy, basic lima bean dish with ham, onion, and seasonings. Served over Mexican cornbread, it makes a delicious hearty meal. You can also do this on the stovetop. Just follow the directions on the back of the lima bean bag and add the seasonings. Slow cooker time is about 7 hours. Add a side salad for a complete meal.

This simple meatball dish is delicious, rich, and fresh. My Algerian husband taught me it as it's one of his favorites from home. The tomato sauce can be used for anything, and the flavors can be adjusted. I like a lot of garlic and pepper. I have found halal hamburger meat to be much leaner and lighter than regular. You can find it at international food stores and halal butcher shops in bigger cities. Serve this dish with a French baguette.

Make dill pickles in a crock! Mix up a simple salt brine, add some spices, and submerge Kirby cucumbers in it for about a week, and you'll get some fairly delicious pickles. I'm pretty sure if you measure your salt right and store the pickles as they're fermenting at an appropriate temperature, you'll get crunchy pickles.
