A crispy tortilla, scrambled egg, and cheese–sounds like breakfast pizza to me!
Ingredients
- 1 large egg
- 1 teaspoon milk
- 1.5 teaspoons butter
- 1 flour tortilla , 7 inch
- 2 slices jalapeno pepper jack cheese
Instructions
-
1
Whisk egg and milk together in a small bowl.
-
2
Melt butter in a skillet over medium heat. Pour in egg mixture and tilt skillet until egg covers the skillet. Cook until egg is set, about 2 minutes. Place flour tortilla over egg, and carefully flip egg and tortilla so that the tortilla is now on the bottom.
-
3
Place cheese slices over egg. Cook until tortilla is crisp, 3 to 4 minutes. Cover skillet and cook until cheese is melted, 1 to 2 minutes.

Nanny's Newfoundland Tea Biscuits
My nanny used to make these tea biscuits all the time. One of my favorite memories of visiting Newfoundland is standing at the kitchen table as she made these and gave us a little bit of the raw dough to taste. They're light and delicious! Serve hot with butter and jam.
Pizza Without the Red Sauce
I do not like red sauce but pizza is one of my favorite foods. So I came up with this good alternative to traditional red sauce pizza. It still has a light tomato taste.
Black Forest Cupcakes
This homemade Black Forest cupcake recipe yields chocolate cupcakes filled with black cherry jam and topped with whipped cream, maraschino cherries, and grated chocolate. They're so delicious!
