These tres leches pancakes are a mouthwatering and easy way to combine your love for tres leches cake with light and fluffy pancakes. They're indulgent, but perfect for a special occasion, upscale breakfast, or brunch.

- 0.67 cups sweetened condensed milk
- 0.5 cups evaporated milk
- 0.33 cups half and half

Combine sweetened condensed milk, evaporated milk, and half and half in a small saucepan and set over medium heat. Bring to a boil, stirring constantly for 3 to 4 minutes. Remove from heat and let cool. This is a sauce, not a syrup, so consistency will be on the thinner side.

Add cake mix, almond milk, eggs, and 3 tablespoons vegetable oil to a large bowl, and beat vigorously by hand for 2 minutes.

Heat a large skillet or griddle over medium heat, and lightly coat with remaining vegetable oil. Add 1/4 cup of the batter for each pancake. Cook until edges begin to puff up, small bubbles appear, pop, and leave small holes, 2 to 3 minutes. Flip pancakes and cook until golden brown on the other side, about 2 minutes more.

Serve pancakes warm with a drizzle of the tres leches sauce, a dollop of whipped cream, and sprinkle of cinnamon.

Copycat Chicken Noodle-O Soup
I grew up on Campbell's® chicken soups but my favorite was the NoodleO's®. Mainly due to the manageable size noodle for the spoon but also because the texture of the noodle was firmer and not mushy like the others. As an adult, I set out to make a copycat version and it took several attempts before getting it right. My previous attempts lacked the tang that you get with a can and the secret ingredient ended up being lemon juice. Who would have thought? Serve with crackers if desired.
Animal Style Fries
Everyone knows that despite being freshly cut, the pale and soggy fries are In-N-Out's weakest point, but if you smother them in cheese, sweet caramelized onions, and In-N-Out spread, they're magical. So replacing the sad fries with crispy frozen fries really is an improvement over the originals here. Spread is just a basic sweet and tangy burger sauce with mayo, ketchup, relish, a little sugar, and a little vinegar. The onions are really the stars here - soft, sweet, and jammy. Be sure to serve immediately as soon as the fries are cooked - the residual heat of the fries and the onions is what melts the cheese.
