This is a delicious and quick pasta dish. Serve with a green salad and garlic bread.
Ingredients
- 1 package uncooked spaghetti , 16 ounce
- 0.25 cups extra-virgin olive oil
- 0.25 cups unsalted butter , melted
- 4 cloves garlic , minced
- 1 cup fresh basil , coarsely chopped
- salt and pepper to taste
- 0.5 cups freshly grated Parmesan cheese

Bring a large pot of lightly salted water to a boil. Place spaghetti in the pot, cook for 8 to 10 minutes, until al dente, and drain.

In a large bowl, toss the spaghetti with the olive oil, butter, garlic, basil, salt, and pepper until evenly coated. Serve with Parmesan cheese.

Brian's Garlicky Prime Rib
After getting tired of our standard prime rib recipe (my mom's old fave), I decided to start experimenting with different tactics to cook a roast. This is what I ended up with...the pan juices alone are worth giving it a try!!...and the roast isn't too shabby either! Serve with garlic mashed potatoes and steamed green beans with slivered almonds.
Home Town Drive-In Pasta Salad
This hometown drive-in pasta salad recipe is from a small drive-in dairy bar in our town, which has been closed for some time. My kids really missed their pasta salad, but the ingredients were listed on a board inside the drive-in, so I worked on trying to recreate it. It's finally right, and I thought I would share it. We like this at room temperature, but it certainly can be refrigerated.

This chilled roasted eggplant and peppers salad is a great side dish or an appetizer in the summer. It's perfect for parties; just place a bowl of tortilla chips next to it. You can also serve this hot with grilled chicken or fish. Either way, it's delicious!
