Amazing Mexican Quinoa Salad
An extremely yummy, spicy, Mexican quinoa salad that will keep in the fridge for up to a week! My kids in university love packing this up for their lunch. You have everything you need for a very healthy meal in one dish! Substitute barley for the brown rice if desired. Turtle beans can be substituted for kidney beans.
Roasted Veggie Antipasto
This is a delicious recipe and keeps for a long time, due to hot water bath processing. Great little jars for picnics, hostess gifts and entertaining. Scrumptious with crackers and cream cheese. I like mine a little on the sweet side and will occasionally add 1/4 cup brown sugar to the mix or use a sweet BBQ sauce. Alter the veggies as you like, trying to keep the overall quantity about the same.
Crispy Turnip "Fries"
Delicious crispy turnip "fries." My daughters and I are on a low-carb diet and were looking for something to curb our French fry cravings. I've heard that turnips can be made into some great fries. I experimented with it and came up with this. You can add whatever spices you'd like.
