This cake uses crushed cookies instead of flour. It is a great cake for kids: they will love crushing all those cookies.
Ingredients
- 1 cup butter
- 6 eggs
- 0.5 cups milk
- 2 cups white sugar
- 1 package vanilla wafers , 12 ounce
- 1 package flaked coconut , 8 ounce
- 1 cup chopped pecans

Preheat oven to 300 degrees F (175 degrees C). Grease and flour a bundt pan.

Cream butter or margarine; add sugar, and beat until smooth. Add eggs, one at a time, beating well after each addition. Stir in crushed vanilla wafers alternately with milk. Add coconut and pecans, and mix until blended. Pour batter into prepared pan.

Bake for 1 1/2 hours. Cool.

Vegan Coconut Caramel
I use this caramel for making diary-free Twix® bars! It has a delicious caramel flavor, and is just as yummy as all those non-vegan alternatives out there. In fact, I'm not vegan, and I prefer it! You could make it a little harder to make caramel candies, or a little runnier for dipping caramel apples.
