A low-carb pizza with one of my favorite veggies.
Ingredients
- 1.5 cups cauliflower florets
- 0.75 cups shredded light mozzarella cheese
- 1 egg
- 2 teaspoons dried basil
- 2 teaspoons dried parsley
- 1 teaspoon oregano
- 0.5 teaspoons fennel seeds
- garlic powder to taste
- 1 green bell pepper , chopped
- 1 onion , chopped
- 1 tomato , chopped
Instructions

Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add cauliflower florets, cover, and steam until tender, 2 to 6 minutes. Allow to cool. Grate cauliflower and measure out 1 cup.

Preheat the oven to 450 degrees F (230 degrees C). Spray a circular or rectangular metal baking pan with cooking spray.

Combine grated cauliflower, 1/2 cup mozzarella cheese, and egg in a large bowl. Press mixture into the prepared baking pan evenly. Sprinkle with basil, parsley, oregano, fennel, and garlic powder.

Bake in the preheated oven until lightly browned, 12 to 15 minutes. Remove crust from the oven and sprinkle with bell pepper, onion, and tomato. Top with remaining 1/4 cup of mozzarella cheese.

Preheat the oven's broiler. Return cauliflower pizza to oven and broil until cheese has melted and crust is crispy, about 5 minutes.

Naan Bread Margherita Pizza with Prosciutto
This naan bread pizza recipe is one of my favorite Friday night dishes. This pizza is quick, simple, and delicious. Instead of making the pizza dough from scratch, I decided to use naan bread for the pizza base. Using naan bread saves time and is also great for portion control. The only difference between this recipe and most pizza recipes is that it doesn't include tomato sauce on the base. I don't like the sogginess that comes from the sauce but feel free to try it with the sauce, as it will still yield good results.
Spicy Lamb Patties
I was forced to create these when my favorite brand stopped making their lamb meatballs, which were a staple in my little food-obsessed world. They're even more scrumptious with a small side of plain yogurt with some mint and cumin stirred into it. Add rice or couscous and a green salad and you have a tasty, easy, somewhat elegant dinner! This recipe can also be used to make meatballs for frying, if you prefer.

This lamb with pomegranate sauce is about as seasonally appropriate as it gets and one of the best things I've tasted in a long time.
