While teaching English in Asia for the past several years, I've been lucky to exchange some delicious and genuine recipes with local people. This Vietnamese banh mi sandwich is awesome and a nice break from the usual sandwiches. The garlic chili sauce is typical in Asian sections of markets, but you can substitute it with Indonesian sambal or Korean chili paste. Beer or red wine is the beverage to serve with this bona fide French-influenced Vietnamese recipe.

Ingredients

  • 4 bonelesss pork loin chops , 1/4-inch thick
  • 4 Frenchs baguettes , 7 inch
  • 4 teaspoons mayonnaise , or to taste
  • 1 ounce chili sauce with garlic
  • 0.25 cups fresh lime juice , divided
  • 1 small red onion , sliced into rings
  • 1 medium cucumber , peeled and sliced lengthwise
  • 2 tablespoons chopped fresh cilantro
  • salt and ground black pepper to taste

Instructions

  1. 1

Set an oven rack about 6 inches from the heat source and preheat the oven's broiler.

  2. 2

Place pork chops on a broiling pan. Cook in the preheated broiler until browned on each side, about 5 minutes, flipping once.

  3. 3

Divide and spread mayonnaise on inside tops and bottoms of rolls. Place one pork chop into each roll; spread chili sauce on top pork. Divide and drizzle with 1/2 lime juice; divide and top with onion, cucumber, cilantro, salt, and black pepper. Divide and drizzle with remaining 1/2 lime juice.

Red Curry Coconut Squash Soup

This red curry coconut squash soup has such an amazing balance of flavors and has officially become my favorite soup. Perfect for a chilly fall day! The fall weather always serves as inspiration for soup, especially butternut squash soups. I wanted to put a spin on the typical squash soup this time, though. Optional garnishes include sliced scallions, toasted squash seeds, or shrimp. I highly suggest the toasted squash seeds as a garnish. They really add a lot!

Eggnog Thumbprints

Thumbprint cookies with a delicious filling, these are perfect for Christmas. Does not use eggnog, but they have an eggnog taste. You can substitute 1/4 teaspoon rum extract and 1 tablespoon milk for the rum.

Pumpkin Soup with Coconut Milk

The spices in this soup really marry up well and make this the tasty, flavorful soup it is. I can guarantee you will impress even the fussiest of eaters. If you can use organic vegetables, the soup will have a glorious color and taste more intense. Most people cannot tell that you have used coconut milk instead of cream. This makes it not only taste good, but full of all the health benefits of the coconut. Add a dollop of plain Greek yogurt or some chopped parsley, or drizzle with good quality, cold-pressed extra virgin olive oil. Enjoy and taste the golden color of the sun!
