These zucchini bars are so delicious that my family can eat the entire batch in one day! These little cakes are very easy to make and really moist. Add a pinch of cinnamon or nutmeg to the cake batter if you like.
Ingredients
- 2 cups white sugar
- 1 cup vegetable oil
- 3 large eggs
- 2 teaspoons vanilla extract
- 2.33 cups all-purpose flour
- 2 teaspoons baking soda
- 1 teaspoon salt
- 0.25 teaspoons baking powder
- 2 cups grated zucchini
- 2.5 cups confectioners' sugar , sifted
- 0.5 cups butter or margarine
- 1 package cream cheese , 3 ounce

Gather all ingredients. Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.

Mix sugar, oil, eggs, and vanilla in a large bowl until well blended.

Combine flour, baking soda, salt, and baking powder in a separate bowl; stir into sugar mixture until well combined. Mix in zucchini.

Spread batter evenly into the prepared baking dish.

Bake in the preheated oven until a toothpick inserted into the center comes out clean, 20 to 25 minutes.

To make the frosting: Blend confectioners' sugar, butter, and cream cheese in a medium bowl with an electric mixer until smooth.

Spread over warm cake. Allow cake to cool completely before cutting into bars.
