Tropical Tiramisu
Ah, nothing like the sweet taste of the tropics! Using my leftover coconut bunny cake I created a tiramisu featuring the tropical flavors of pineapple, mango, ginger, and macadamia nuts. My cake was a white cake but a leftover yellow cake would work just as well. Sliced almonds can be substituted for macadamia nuts.
Salmon Puffs
Delightful salmon puffs filled with feta cheese and wrapped in pastry. I have used spinach and cooked tiny shrimp instead of salmon in this recipe.
Ham Cake-ettes
These ham cakes are a great way to turn leftover Easter ham into a perfect combo of pancakes and croquettes. Serve with a honey mustard sauce or any variety of chutneys. Applesauce is also a nice accompaniment.
Rhubarb Rolls
Rhubarb rolls are a wonderful rhubarb dessert that always gets requests for the recipe. Easy and quick to make. Serve with whipped cream or ice cream.
Huckleberry-Lemon Scones
These delightful huckleberry-lemon scones are bursting with the fresh flavors of summer, making them the perfect tea-time treat. Juicy huckleberries add a pop of tart sweetness, while a touch of lemon juice brightens every bite. Rich half-and-half keeps them tender and flaky, creating a bakery-worthy indulgence with minimal effort.
Pani Popo (Hawaiian Coconut Bread)
Delicious Hawaiian bread that anyone will love--even those who don't like coconut! Eat it for dessert or with any meat hot off the grill. Tastes great warm or cool.
Easy Lemon Poppy Seed Muffins
These lemon poppy seed muffins made with yogurt and lemon zest are moist and delicious, with loads of crunchy poppy seeds. A tart lemony glaze adds even more lemony flavor.
Best Babka
This babka recipe makes a traditional Polish Easter bread. Serve as a coffee cake, for breakfast, or with tea. The recipe makes three large loaves.
Easiest Homestyle Macaroni and Cheese
My family always expects the 'real deal' homemade macaroni and cheese, and this recipe passed the 'family taste test' with flying colors on Easter. However, this time it was much easier to make, using jarred Alfredo sauce instead of homemade white sauce. Try it. It's easy as pie, and FABULOUS!
Chef John's Pizza Rustica
Some people describe pizza rustica as an Italian meat-filled quiche, but I think this traditional Easter recipe is way closer to a savory cheesecake filled with a massive amount of goodness. The light, flaky crust holds together an embarrassment of riches — sausage, smoked ham, salami, and pepperoni, plus ricotta, mozzarella, and Pecorino Romano cheeses. It's definitely not like pizza!
Easter Meat Pie
This Italian Easter pie is a winner every holiday. It's stuffed full of ham, cured meats, and ricotta to make a cheesy, meaty pie that really satisfies!
Capirotada
Capirotada is a deliciously rich Mexican bread pudding with layers of buttered bread, raisins, peanuts, and shredded cheese, drenched with a sweet cinnamon syrup. So good! It's traditionally served on Good Friday or during Lent.
