Cuban Midnight Sandwich
This sandwich is called a 'Media Noche' which translates to 'Midnight.' It makes a wonderful dinner sandwich because it is served hot. A nice side dish is black bean soup or black beans and rice, and plantain chips.
Bubble and Squeak
Bubble and squeak is a great way to use leftovers and get the kids to eat cabbage! It is an easy side dish to make with leftover potatoes, ham, and any greens. I recommend using a good nonstick pan. Top with a fried egg for brunch if preferred. Tastes great with ketchup.
Buffalo Chicken Layered Mashed
A play on lasagna substituting Roasted Garlic Flavored Mashed Potatoes for the noodles.
Roasted Vegetable Lasagna with Pesto Cream Sauce
Here's a new twist on lasagna made with vegetables and a creamy pesto base. It's a great option for entertaining when you need to satisfy a lot of different guests' tastes. The roasted vegetables also make a great side dish that goes with any meat. They can be made a day in advance. I often bake a double batch and set half aside to go with another meal.
Roasted Vegetable and Kale Lasagna
A delicious layering of roasted vegetables and garlic-sauteed kale make this cheesy lasagna a healthier alternative to the classic Italian dish.
Leftover Leg of Lamb Stew
This stew is my favorite use of leftover lamb! Serve with egg noodles, pearl couscous, rice, mashed potatoes, or all by itself in a bowl.
Armenian Shish Kabob
Mouth watering BBQ/grilled lamb or beef with veggies and spices. Serve with rice pilaf and pita bread.
Mediterranean Lamb and Lentil Stew
This light and delicious stew makes a perfect springtime meal, especially when served over rice pilaf. It's a favorite of my children.
Roast Greek Lamb with Tzatziki, Roasted Vegetables, and Greek Salad
Sunday roasts and summer are two of my favorite things. But when it's too hot outside, the last thing you want is a full roast with gravy and all the trimmings. It just seems wrong. It's also far too hot to be in a kitchen for long. Greece is famous for its lamb dishes. So what better way to unwind on a warm summer Sunday afternoon than to create this laid-back, slow-roasted Greek lamb feast served with the perfect sides?
Heavenly Lamb Shanks
This recipe for lamb shanks in the oven is simply gorgeous because it's so comforting. The meat is slow-cooked in a generous amount of red wine. Preparation is easy too โ it goes from the stovetop to the oven. This is best served with the pan juices poured over creamy mashed potatoes, sweet potatoes, pumpkin, risotto, or even soft polenta.
Uzbek Plov (Lamb and Rice Pilaf)
After searching everywhere for a Uzbek plov (lamb and rice pilaf) recipe to recreate an amazing dish I tried at a Middle Eastern restaurant, I decided to try making this myself. Though not authentic, it still is amazing. Enjoy!
Irish Shepherd's Pie
This Irish shepherd's pie has a savory ground lamb layer topped with rich and cheesy mashed potatoes. This dish is a lovely alternative to the much more common corned beef and cabbage you may have been planning for St. Patrick's Day dinner.
