Ziti with Roasted Zucchini and Garlic
Roasting the zucchini and garlic takes a little bit of time, but changes everything about this ziti recipe! It's well worth the wait.
Ziti and Eggplant
Eggplant pieces absorb the flavors to create a delicious tomato sauce served over ziti, complemented by cheese pita bread. You may easily coordinate the three parts of the recipe (pasta, sauce, pita) to finish at the same time. This recipe works great as just a pasta dish if you want to make the pitas separately! If you want, you can saute some garlic and onions before you throw the eggplant chunks into the skillet.
Quinoa Salad with Roasted Yams
This is an all-time favorite of my friends and family! Add some roasted beets and Romanesco broccoli if desired.
Easy Candy Yams
In this candied yams recipe, chopped sweet potatoes are baked with brown sugar, caramel topping, and butter, then finished with a layer of roasted marshmallows.
Slow-Roasted Winter Vegetables
This is a mixture my husband came up with using what we had on hand in the fall, and it became a favorite. The first effort for these slow-roasted vegetables was on the BBQ, but it works just as well in the oven. Tastes even better re-heated, and makes great addition to soups and pot pies.
Candied Yams and Marshmallows
My honey kept asking for candied yams with the orange juice syrup and marshmallows. I couldn't find a recipe, so I made one up. Learn how to make these yams here โ I must say they came out mighty fine!
Roasted Acorn, Butternut, and Apple Soup
This is fabulous soup for the fall season.
Thai-Inspired Roasted Acorn Squash Soup (Vegan)
Roasted acorn squash blended smooth with a mild curry and ginger heat.
Roasted Acorn Squash with Apples and Cranberries
Nutty, savory, tart, and sweet... This acorn squash makes a great autumn side dish that's even better the next day, and perfect for Thanksgiving! Serve with roasted chicken or turkey. This can also be tossed with white or brown rice for a complete meal.
Gnocchi with Cream of Acorn Squash and Borgonzola Cheese
This creamy gnocchi make a great first course or "primo piatto". Sweet roasted acorn squash are pureed with a bit of butter and sage and tossed with the hot gnocchi and dotted with fresh Borgonzola cheese. The pungent cheese gets all melty and nicely offsets the sweetness of the squash.
Sausage- and Pear-Stuffed Acorn Squash
This main course dish is a real beauty! Acorn squash halves are roasted and deliciously filled with a savory sausage and pear saute. The natural sweet flavors from the pear and squash are perfectly coupled with the warm taste of sausage and sage. I've written the recipe for 2 people, but you could easily double or even triple the filling for more squash halves!
Curried Acorn Squash Soup
A fall-tastic soup featuring acorn squash, apple, ginger, and curry.
