Grandma's Collard Greens
These are, without a doubt, the best collard greens I have ever eaten (and I have had my share). My grandma used to make this recipe in the summer when her collards in the garden were ready. If you don't like these, you don't like collard greens, guaranteed! Add more red pepper flakes if you like it spicy.
Cold Corn Salsa
This cold corn salsa recipe is delicious, with or without tortilla chips!
Stir-Fried Asian Collard Greens
This stir-fried, Asian-inspired, fast and easy way to prepare collard greens doesn't have the 'slimy' factor in long-cooked versions, making it a hit with my picky family!
Slow Cooker Black-Eyed Peas
We made these black-eyed peas and ham hocks when our family was visiting. We went to Disney World on New Year's Day, and I just had to have black-eyed peas before midnight. To make it easy, soak black-eyed peas in the slow cooker overnight. This is a little thinner, like a very rich soup. We really enjoyed it; hope you will, too! Hot buttered cornbread and chunky applesauce are my favorites to serve with black-eyed peas.
Down Home Collard Greens
A delicious collard green recipe that goes well with any soul food or poultry entree.
Marinated Black-Eyed Pea Salad
This easy black-eyed pea salad has lots of colorful vegetables and fresh parsley tossed with a sweet and spiced vinaigrette. It gets better the longer you chill it. It's a terrific salad to take to a potluck or any kind of get-together.
Slow Cooker Black-Eyed Peas with Bacon
These Southern-style crockpot black-eyed peas with bacon are the best ever! We make them annually for New Year's.
West African-Style Peanut Stew with Chicken
This hearty, one-pot West African chicken and peanut stew is made with a spice-infused peanut butter and tomato base, sweet potatoes, and collard greens. This recipe, which appeared in the December/January 2020 issue of Allrecipes magazine, comes from Ellie Krieger's cookbook, "Whole in One: Complete, Healthy Meals in a Single Pot, Sheet Pan, or Skillet." Refrigerate leftovers for up to four days in the refrigerator.
New Year's Soup
Black-eyed peas and collard greens are traditional foods to eat on New Year's Day for luck and money, and both are found in this hearty soup that's bound to usher in a prosperous year.
Gomen Wat
Traditional Ethiopian vegetarian dish. I've cut down the amount of oil that is used in the dish and added some different spices to complement the collards.
Spicy Bean Salsa
Serve this spicy bean dip with tortilla chips. It's very hard to resist!
Liberian Style Collard Greens
This is a delicious twist on a soul food staple! These African greens are never bitter. I got the recipe from a Liberian restaurant. You may think the ingredients are strange, but they come together perfectly. You may want to adjust the amounts to your taste. When cooking something like greens, eyeballing is the best measurement. The longer you cook these, the more the flavors mesh and the better they taste.
