Chef John's Shrimp and Grits
Shrimp and grits are very simple to make for breakfast, lunch, or dinner, and this recipe is a snap. You can make the grits a bit ahead since they stay hot for a long time. Have everything ready before you start cooking the shrimp as they only take a few minutes to sauté.
The Farmer's Frittata (Italian-Style Omelet)
Loaded with fresh vegetables and a touch of bacon, this farmer's frittata is my favorite type of frittata. It's a perfect way to use your gorgeous, fresh garden vegetables. Curing the squash with kosher salt pulls out the bitterness and makes the squash taste sweeter. It's got great texture, taste, and visual appeal and can be served hot, warm, at room temperature or cold for any meal of the day.
"Tadpole in the Hole" - Breakfast Sausage and Kale Dutch Baby
This miniature version of toad in a the hole features small adorable breakfast sausages. I also added kale to the 'breakfast pool' our little tadpoles will be swimming in which will make this more nutritious (and delicious).
Million Dollar Dip
Formerly known as 'Neiman Marcus dip,' this million dollar dip tastes just like it sounds. I've had more than a few cheesy dips in my day, but this is by far the richest and most delicious one yet! Served with crackers and garnished with green onions and bacon, this dip is sure to be a huge hit at your next party.
Spicy Salami Spread (Nduja)
I'm not saying this spicy salami spread is as good as traditional nduja, but it does take about 3 months' less time to make while still delivering most of the characteristics that make the Calabrian delicacy so amazing. And just in case you're not familiar with nduja, a few of those characteristics are a rich, spicy, super-savory flavor, and soft, luxurious texture. Present as a self-serve spread next to toasted bread or top with herbs for a crostini appetizer.
Asparagus and Ham Quiche Bites
It's asparagus season, and these asparagus and ham quiche bites are perfection. With just the right proportion of ham, asparagus, and Gruyère cheese in a tender, moist, luxurious egg base, they are amazing at any temperature — warm, room temperature, or cold.
Perfect Pot Stickers
These pot stickers made with homemade dough and filled with ground pork, ginger, garlic, and cabbage are so versatile — you can fill them with anything you want and as full as you want. The dumplings are fried and steamed, then fried again until golden and perfectly crispy on the bottom for a truly unique dumpling.
Chef John's Roman-Style Chicken
Chef John's Roman-style chicken recipe delivers one of the best bites of braised chicken you will ever enjoy. Tomatoes and bell peppers make the sauce, and you'll never believe how good this is over olive oil mashed potatoes.
Candied Bacon
Candied bacon makes a great crunchy, smoky, and sweet party snack.
Ants Climbing a Tree Glass Noodles
This is Chef John's take on the classic Sichuan dish Ants Climbing a Tree, a magnificent mix of glass noodles and ground pork that is rich, spicy, and savory. The name is derived from the way the bits of pork stick to the noodles in the finished dish.
Viking Stew
This Viking stew, made with meat, berries, mushrooms, plenty of fresh herbs, and root vegetables typically available to the Vikings, is a seemingly primitive dish with a remarkably sophisticated flavor. It works with any meat, so if you cannot hunt for wild boar, do not be dismayed—you can still make it!
Pistachio Stuffed Pork Tenderloin
Chef John's pistachio-stuffed pork tenderloin with a quick, easy pan sauce is impressive and beautiful to serve. The pistachio and Dijon mustard filling is a flavor combination that you will use again and again.
