Almond Conchas
I based my recipe on Melissa Amador's conchas recipe. I simplified it and used milk in place of water, oil in place of butter in the bread recipe, and I used marzipan and almond extract in place of ground cinnamon and vanilla extract in the topping.
Homemade Churros with Cardamom and Chocolate
I just had to share my favorite dessert of all time, in the hopes of keeping the Valentine's Day fire on: the Mexican churro with cinnamon-cardamom sugar and dark chocolate dip. Plus a fragrant spin with cardamom and star anise in the mix! Crunchy on the outside and soft on the inside, all smothered with a sinfully dark chocolate sauce.
Gorditas
Make gorditas at home with this easy masa dough. These little corn cakes puff up when fried and form a pocket for stuffing with cheese, beans, or just about anything!
Pan de Elote Facil (Easy Corn Bread)
An easy Mexican cake made with fresh sweet corn kernels and store-bought pancake mix. It's sweet--Mexicans enjoy it as a dessert with warm honey on top.
Mrs. Patti's Mexican Cornbread
Mexican cornbread with a touch of spice.
Sopapillas
This is a flat bread that is easy to prepare, and is usually served with something sweet to put on top. Honey or cinnamon sugar. I prefer it with honey butter. Sometimes it can be served with guacamole or bean dips in place of traditional tortillas.
Churros II
Spanish crullers.
Big Ray's Mexican Monkey Bread
I made this last night, and WOW it was delicious. I actually made it for a breakfast dish one time, and I think it's perfect for that as well.
Pan Dulces
These pan dulces are Mexican sweet buns, great to make during the winter time, especially for Christmas. People love the sugar topping that browns when they bake.
Rosca de Reyes
Also called pan de rosca, this traditional holiday Mexican bread is a bit time-consuming to make, but absolutely worth the effort.
Hard Taco Shells
Homemade taco shells are crunchy and taste excellent! Use homemade tortillas or store-bought corn tortillas. You may need a little practice at first. Fill and serve tacos right after frying, or they may become chewy. Leftovers may be heated in the oven for crisping.
Tex-Mex Enchiladas
An extra-cheesy, easy-peasy Tex-Mex Enchilada recipe from a Mexican cook who added a Texas flair. Assemble the night before and pop them in the oven the next day for a carefree meal.
