A hearty winter soup with beautiful color, subtle flavors, and velvety texture.
Spicy Roasted Butternut Squash, Pear, and Bacon Soup
Fall spices and a hint of chipotle combined with the sweetness of butternut squash and pears come together with Swanson® Chicken Broth to create a warming puree.
Halupki (Stuffed Cabbage)
This stuffed cabbage recipe, known as halupki on the Ukrainian side of my family, is made with beef, pork, and rice encased in cabbage and drizzled with a thin, sweet tomato sauce. Leftovers freeze well — if you have any! My grandma Eugenia taught me how to make this. Every family has their own twist on this traditional dish. Enjoy with mashed potatoes just as we always do in my family!
Butternut Squash and Spicy Sausage Soup
Fall is my favorite time of year because I can make this butternut squash and spicy sausage soup. It's filling and delicious! There are many ways to customize the ingredients to suit your tastes. Sometimes, I used flavored rice, depending on what I had on hand. Also, add more or less chicken broth to make the soup's thickness fit your liking.
Roasted Butternut Squash Soup with Apples and Bacon
I created this roasted butternut squash soup with apples and bacon recipe on Christmas Eve, which was a huge hit. The caramelized roasted squash gives the soup extra depth of flavor. This soup has a very creamy consistency but is completely dairy-free except for the optional garnish of sour cream (I did this on purpose due to a guest who was allergic to dairy). It is also extremely healthy. Don't shy away from the curry powder; it gives the soup extra flavor. Feel free to play around with the amount of carrot, onion, celery, or garlic to your taste. This soup can be made the day before and reheated.
Chef John's Butternut Bisque
For a winter special occasion or just a weekday meal, this butternut squash soup recipe makes a perfect, warming starter course. The snipped chives and pomegranate garnishes add a festive touch, but you can also use crumbled bacon and a swirl of crème fraiche to top this bisque.
Caramelized Butternut Squash Soup
This caramelized butternut squash soup is fall comfort food at its best. Garnish with fresh homemade croutons and bacon.
Butternut Squash and Apple Soup
Soup made with traditional fall crops, butternut squash and Granny Smith apples.
Full-of-Veggies Burritos
The vegan burrito is packed full of so many 'good for you' items, you will not miss the meat! Don't let the seasoning fool you, it may say chorizo, but this is a medium hot chile-based spice.
Country Breakfast Burritos
Country gravy, bacon, sausage, onion, cheese, egg, and Tater Tots® wrapped in a burrito. Our 2-year-old loves Tater Tots® and frozen Jimmy Dean® turkey sausage links so much that we buy them both in bulk at Costco. My family also loves bacon, so we buy pre-cooked bacon to cut down on the fat. Our meal ultimately cost only $2.75 per person.
Air Fryer Chile Verde Burritos
While thinking of a way to use up leftover pulled pork, I remembered a dish I often had growing up in Colorado. While not quite the same, it inspired this recipe which was different and a great way to use it up. Serve with additional salsa verde for dipping if desired.
Instant Pot® Make-Ahead Breakfast Burritos
The molds to make these can easily be found online. They come in a 3-pack for $15 and I have included them in my photo so that you can see exactly what they look like. This was the best money I've spent in a long time. With little effort, I had 12 burritos in my freezer ready to grab and go. They were fluffy and full of flavor.
