Instant Pot® Butternut Squash Soup with Coconut Milk
I do not like butternut squash soup, but I love this recipe. I adapted it for the Instant Pot® pressure cooker. You may garnish with unsweetened coconut flakes, salted peanuts, Parmesan cheese, or any other topping you think would add to your enjoyment.
Mexican Bean and Squash Soup
This Mexican bean and squash soup is a spicy, flavorful fall dish. It lends itself well to substitutions, and you can use any kind of firm squash and any bean. You can also adjust the heat level to your preference by decreasing or leaving out the chipotle peppers.
Easy Vegan Butternut Squash Soup
This is my version of a well-known soup recipe that's easily adjusted to your own preference, but is also amazing as-is!
Halupki (Stuffed Cabbage)
This stuffed cabbage recipe, known as halupki on the Ukrainian side of my family, is made with beef, pork, and rice encased in cabbage and drizzled with a thin, sweet tomato sauce. Leftovers freeze well — if you have any! My grandma Eugenia taught me how to make this. Every family has their own twist on this traditional dish. Enjoy with mashed potatoes just as we always do in my family!
Pumpkin Soup with Coconut Milk
The spices in this soup really marry up well and make this the tasty, flavorful soup it is. I can guarantee you will impress even the fussiest of eaters. If you can use organic vegetables, the soup will have a glorious color and taste more intense. Most people cannot tell that you have used coconut milk instead of cream. This makes it not only taste good, but full of all the health benefits of the coconut. Add a dollop of plain Greek yogurt or some chopped parsley, or drizzle with good quality, cold-pressed extra virgin olive oil. Enjoy and taste the golden color of the sun!
Butternut Squash Soup with Persimmon
Persimmon adds an extra splash of color to this yummy butternut squash soup plus a sweet and fruity flavor. Try it! You won't be disappointed. Use vegetable broth if you like it vegetarian.
Roasted Winter Vegetable Soup
This is a tasty and satisfying pureed soup that makes the best of the humble produce that winter farmers' markets have to offer.
Red Curry Coconut Squash Soup
This red curry coconut squash soup has such an amazing balance of flavors and has officially become my favorite soup. Perfect for a chilly fall day! The fall weather always serves as inspiration for soup, especially butternut squash soups. I wanted to put a spin on the typical squash soup this time, though. Optional garnishes include sliced scallions, toasted squash seeds, or shrimp. I highly suggest the toasted squash seeds as a garnish. They really add a lot!
Butternut Squash Soup with a Kick
This is a great butternut squash soup with a kick recipe that will warm you up in a hurry. It's great any time of year. You can adjust the amounts of jalapeño, ginger, and sour cream to whatever you like. You can vary the amount of sour cream depending on how hot you want the soup to taste.
Creamy Vegan Butternut Squash Soup
This vegan butternut squash soup has ginger, carrots, and apples for a wonderful flavor combination. Instead of cream, I use coconut milk.
Chef John's Roasted Butternut Squash Soup
This roasted butternut squash soup is my favorite fall soup of all time. It's inexpensive, easy, nutritious, and the roasted squash makes it naturally sweet and absolutely delicious!
Coconut Curry Butternut Squash Soup
Very filling and even a little zesty, this butternut squash soup is a decadent appetizer. Butternut squash is hearty on its own, but the coconut milk curry makes the mixture truly rich. Serve with a warm baguette.
