Dakdoritang (Korean Spicy Chicken Stew)
'Dakdoritang' is a chicken dish that's cooked in a spicy red sauce along with vegetables such as potatoes, carrots, and onions. It's also called 'dakbokkeumtang' or 'dakmaeuntang.' It's usually made by cutting up a whole chicken into small pieces, but I use a combination of chicken thighs and wings. The result is succulent pieces of chicken packed with spicy and savory flavors!

Korean Short Ribs (Kalbi Jjim)
Kalbi Jjim is a classic Korean beef dish. It uses the same meat as Kalbi Barbeque but the way it's cut is a little different. The meat is cut into squares instead of thin slices. It's a sweet beef dish that can be served a main dish for any occasion. Kids usually love this.
Tteokbokki (Korean Spicy Rice Cakes)
This firery dish features chewy rice cakes (garaetteok) seasoned with spicy chile paste. A staple of Korean street food, you'll often find bubbling pots of tteokbokki ready to serve. Garnish with sesame seeds for an extra crunch.
Korean Spicy Chicken and Potato (Tak Toritang)
A very easy meal to make! Chicken drumettes, potato, carrots, and onion simmer in a spicy sauce that goes best with white rice. You can find Korean hot pepper paste in a Korean/Asian market. I haven't tried looking in a grocery store. Its Korean name is 'gochujang'. Serve with hot cooked rice.

Ba'corn Cheese Corn
This bacon-studded "cheese corn" is a popular bar snack in Korea, made of pure bacon-y, creamy, cheesy, corny decadence. The original recipe combines mayonnaise and sweetened condensed milk, but we're going with heavy cream here for a lighter approach. This may be the first time in my career that I've "lightened up" a recipe by adding a cup of heavy cream. Garnished with green onions, this would be amazing with a cold beer!

Godeungeo (mackerel) has a very special place in my heart, having eaten it every which way imaginable - pan-fried, grilled, braised, canned, and smoked during my days in Seoul. Serve with rice and other side dishes.
Fried Kimchi
Kimchi is a popular Korean side dish featuring fermented cabbage. Other vegetables can be used and applied with the same fermentation process to produce a similar taste and different textures. In this recipe, I fry some kimchi to completely alter the taste and texture for a smoky doppelganger! It is so great with Korean barbeque and with plain old rice. It is certainly one of my favorites and so easy to make. Enjoy hot or cold! Sprinkle sesame seeds on top as a garnish.
