Jan's Savory Breakfast Sausage Patties (Paleo)
Very simple, fresh-tasting, and preservative-free sausage. You can easily adjust the spices to your taste preferences. Make plenty and freeze ahead! Defrosting takes only 1 minute in a microwave on high power.
Bill's Fried Bacon
If you are tired of simple fried bacon, try this. Bacon is simmered in a spice blend, then cooked until crisp and coated with great flavor.
Heart Attack Eggs
This is a great breakfast, especially on the weekend. You fry bacon on a skillet, then after the bacon is crispy, fry eggs in the bacon grease. Garnish your plate with toast or fruit.
Homemade Sausage
Delicious sausage, and I know exactly what's in it! Add to pretty much anything you would add meat to spice it up a bit or enjoy by itself.
Paleo Baked Eggs in Avocado
This avocado egg recipe has a nice contrast between the soft and fresh avocado and the creaminess of a poached egg โ it is brilliant. Good thing is, it's also healthy and satisfying.
Spanish Paella
A very traditional Spanish paella, garnished with Spanish chorizo, chicken, squid, mussels, shrimp, and peas. A paella pan is recommended for making and serving this dish.
Mexican Paella with Cauliflower Rice
This grain-free, Mexican-style paella is made with chorizo, chicken, tilapia, and cauliflower rice. It makes a beautiful presentation for dinner, and each bite is full of rich flavor.
Pressure Cooker Paella with Chicken Thighs and Smoked Sausage
This is a no-seafood pressure cooker paella flavored completely with chicken and smoked sausage. The recipe uses chicken thighs, which can be browned (as the recipe dictates) to draw out the deliciousness from the skin or cooked within the paella mixture for a lighter flavor. Either way, a super delicious dish made quickly in a pressure cooker.
Cascadia Fideua
(Aka Spanish Spaghetti or Noodle Paella) Pronounced 'Feed-wa'. I heard of this variation of paella that used noodles instead of rice. I am a big fan of paella and wanted to try it, but couldn't find a recipe. This is my version of fideua. It turned out awesome and a lot faster to cook than paella. I made mine in a 10" cast iron skillet, and made enough to feed about 4 peeps.
North African Paella
A twist on the classic Spanish dish. It uses merguez, couscous, and cumin to give a uniquely Middle Eastern/North African flavor.
Phyllis's Braised Collard Greens
Phyllis's braised collard greens, cooked low and slow with ham hocks, are meltingly tender and delicious.
