Fried Pot Stickers
I had fried pot stickers once on vacation and I have been trying to mimic their taste ever since. Serve with hoisin sauce.
Yaki Mandu (Korean Dumplings)
Mandu are Korean dumplings that can be steamed or fried. Yaki means fried. These dumplings have a beef, cabbage, and garlic filling and are served with a dipping sauce. They're great for parties. There's a lot of prep in making these, but as quick as you can fry them they'll be gone!
Traditional Pot Stickers
This pot sticker recipe is from the area of Northern China. Wonton wrappers are stuffed with finely chopped vegetables and pork, then fried and served with a spicy dipping sauce.
Spring Rolls
These tasty spring rolls are packed with vegetables, seafood and pork. They contain a lot of ingredients but are worth the effort. Serve them with your favorite sauce. Some types of mushrooms may need to be soaked 2 to 3 hours before use. Ground turkey may be substituted for pork.
Basque Salad
This recipe is inspired by Woolgrowers Restaurant in Bakersfield, California. Among the many appetizers they give, there is one that is very much like this salad which is handy to have in the refrigerator. It is very good and close to my inspiration.
Linguine with Cajun-Spiced Shrimp and Corn
After throwing some ingredients together for tapas, the flavor was so fresh and light my family asked for more. By warming it through with a few more ingredients I turned it into a family meal with pasta instead of just a snack.
Bacon Stuffed Avocados
They are what they sound like. Delicious. Serve as appetizer. Doesn't need too much sauce. Just adds the perfect amount of flavor!
Pipirrana (Spanish Potato Salad)
Also called ensalada campera, it's a nice change from mayo based potato salad.
Avocado and Tuna Tapas
Living in Spain I have come across a literal plethora of tapas. This tuna stuffed avocado is a light, healthy dish that goes best with crisp white wines and crunchy bread. This recipe is great for experimenting with a variety of different vegetables, spices, and kinds of vinegar.
Seviche
This seviche recipe was given to me by a dear friend from Ecuador. You can use raw shrimp, scallops, or fish instead of oysters.
Sun-Dried Tomato Tapenade
A delicious take on the usual sun-dried tomato tapenade but don't be tempted to use California sundried tomatoes because they are too sweet. I've never actually had the patience to chill this and always end up serving it right away. It's a huge hit! Serve with your favorite crackers.
Pickled Eggs II
I made these when I had my bar, and they were always a big hit. I made them in large batches because of the standing time, but have scaled the recipe for home use. Extra large eggs are boiled, then pickled in a simple brine solution. For a variation, add dry minced onion flakes, crushed red pepper or hot sauce to the brine.
