Authentic Paella Valenciana
A traditional paella Valenciana. I lived in Spain for two years where I was taught the art of making paella which originated in Valencia. I haven't found anything on here which is even close to authentic, so I thought I would add this recipe for those who would like to try a taste of Spain. First and foremost you will need a special paella pan called a paellera or just a paella. Trust me after you taste this you'll be glad you bought the special pan.
Authentic Seafood Paella
Paella is a classic Spanish dish of rice cooked with shellfish and seasoned with saffron. It is perfect for easy entertaining.
Monica's Baptist Sangria
This fresh, sweet nonalcoholic drink is beautiful in a punch bowl and will have your guests coming back for more and more!
Black-Eyed Pea Pie
I never like black-eyed peas until I tried this recipe. It is quite filling, a meal in itself. You can substitute hot Italian sausage in place of chorizo, and, if desired, you can use only a bottom crust to make it a single crust pie.
Vegan Udon Noodles Soup with Tofu and Vegetables
This is a savory vegan soup recipe with udon noodles, tofu and delicious Asian vegetables like bok choy and shiitake mushrooms.
Baked Mexican Rice
I've tried many variations on baked rice and wanted to try it with Mexican flavors. It's so easy to let the rice bake away while you take care of other things or prep the rest of the meal. Garnish with additional green onions if you like.
Colorado Mexican Rice
I'm Mexican, and we eat Colorado rice every day. It is a must in our daily meals. Mozzarella or Chihuahua cheese may be substituted for manchego.
Tacos Gobernador
These tacos originated in Mazatlan, Sinaloa, Mexico. It is said that the governor of Sinaloa loved shrimp and quesadillas so the chef of a well-known restaurant created these, a cross between a shrimp taco and a quesadilla. And so these were named Tacos Gobernador ('Governor Tacos').
Samosadilla (Samosa Quesadilla)
While it's true a perfectly made, expertly fried, and quickly served samosa is superior to this version, that can be a very rare combination of events. By comparison, this quesadilla approach is almost impossible to mess up, and if you use enough oil in your pan, you should be able to achieve a beautifully browned, crispy crust that rivals something out of a deep fryer.
Quesadillas de Flor de Calabaza (Zucchini Blossom Quesadillas)
These quesadillas de flor de calabaza (zucchini blossom quesadillas) are very popular in Mexico. The bacon grease in the recipe adds another level of tastiness to the quesadillas. Plus, they crisp up beautifully.
Street-Market Fried Quesadillas
A delightful combination of flavors like red pepper, corn, and chipotle mixed with roast beef hash make a perfect filling for these street-market style quesadillas, bringing our palates to the traditional food from the streets of Mexico. Crispy and delicious!
Andy's Spicy Green Chile Pork
Andy's slow-cooked spicy green chile pork recipe is rich, tender, and irresistible. It's delicious plain or an excellent filling for tacos and enchiladas. We crave this pork, and you will, too.
