Andy's slow-cooked spicy green chile pork recipe is rich, tender, and irresistible. It's delicious plain or an excellent filling for tacos and enchiladas. We crave this pork, and you will, too.
Ingredients
- 1 white onion , chopped
- 2.5 pounds pork shoulder roast
- salt and ground black pepper to taste
- 1 , 16 ounce
- 0.5 cups chopped fresh cilantro
- 2 serranos chile peppers , or to taste

Layer onion into a slow cooker. Season pork with salt and black pepper; place on top onion. Pour salsa over pork; sprinkle in cilantro and serranos.

Cover slow cooker. Cook on Low until pork is very tender, about 8 hours. Gently transfer pork to a cutting board. Strain and discard about 1/2 liquid from slow cooker; reserve remaining 1/2 liquid. Strain reserved liquid if desired, discarding onion, cilantro, and serranos.

Shred pork using two forks; stir into reserved liquid, then serve.
