Dakdoritang (Korean Spicy Chicken Stew)
'Dakdoritang' is a chicken dish that's cooked in a spicy red sauce along with vegetables such as potatoes, carrots, and onions. It's also called 'dakbokkeumtang' or 'dakmaeuntang.' It's usually made by cutting up a whole chicken into small pieces, but I use a combination of chicken thighs and wings. The result is succulent pieces of chicken packed with spicy and savory flavors!
Korean Beef Short Rib Stew (Galbi Jjim)
This is the ultimate Korean comfort food. Sugar, corn syrup, and soy sauce can be adjusted to taste. The trick to tender ribs is a looong cooking time. Feel free to let it stew longer. Some versions in Korea also add chestnuts or dates to the stew.
Budae Jjigae (Korean Army Base Stew)
This dish originated after the Korean War when food was scarce. Canned spam, hot dogs, and beans from U.S. military bases were combined with kimchi, vegetables, noodles, and spicy seasonings to create a hearty stew. I first tried it at a Korean restaurant near my home and loved it so much I learned to make it myself. My version is fairly spicy!
Korean Soybean Paste Soup
Known as doenjang jjigae in Korea, this simple fermented soybean paste soup with tofu is tasty, easy to make, and full of vegetables like zucchini, onions, potatoes, and mushrooms. It's a true Korean recipe that's usually served with rice and other side dishes. Garnish with sliced green onions.

Dol sot bi bim bap is Korean for hot stone bowl with mixed rice โ oh, and vegetables, meat, and egg. My go-to favorite Korean dish, next to haemul pajeon and bulgogi. I'm a big carnivore, so my version has about 25% more meat than the traditional version.

Ba'corn Cheese Corn
This bacon-studded "cheese corn" is a popular bar snack in Korea, made of pure bacon-y, creamy, cheesy, corny decadence. The original recipe combines mayonnaise and sweetened condensed milk, but we're going with heavy cream here for a lighter approach. This may be the first time in my career that I've "lightened up" a recipe by adding a cup of heavy cream. Garnished with green onions, this would be amazing with a cold beer!

Korean Spicy Chicken and Potato (Tak Toritang)
A very easy meal to make! Chicken drumettes, potato, carrots, and onion simmer in a spicy sauce that goes best with white rice. You can find Korean hot pepper paste in a Korean/Asian market. I haven't tried looking in a grocery store. Its Korean name is 'gochujang'. Serve with hot cooked rice.
