Doro Wat: Ethiopian Chicken Dish
I love Ethiopian food but had difficulty finding authentic recipes online. I ultimately found 3 or 4 recipes and altered them all to incorporate them together in an attempt to capture the flavors in this doro wat: Ethopian chicken dish. Typically served with injera and some side vegetable dish. I prefer Atkilt, a cabbage and potato dish, but there are many delicious options.
African Curry
This is an African (Mozambique) curry that can be done with chicken, shrimp, or crab. Goes well with tomato chutney and onion hot sauce. For shrimp or crab, use 1 pound.

Hawaij Vegetable Soup
Hawaij is a Yemenite curry blend that may include coriander, cumin, turmeric, saffron, black peppercorns, and cardamom. It makes a delicious, fragrant, and beautiful vegetable soup. Hawaij can be purchased at World Market or at a well-stocked kosher grocery market.
Pomegranate Stew with Chicken (Khoresh Fesenjan)
Chicken, onions, finely processed walnuts, and pomegranate juice are simmered to perfection. The sauce should be as thick as a good chili. Serve with saffron steamed basmati rice. Enjoy! If you prefer, substitute angelica powder for cardamom; instead of pomegranate juice, you can substitute 1/2 cup pomegranate paste diluted in 2 cups water.
Vietnamese Style Vegetarian Curry Soup
Vietnamese-style curry powder can be found in Asian markets. If you can't find it, use Madras curry powder. This spicy soup can be made into a thick stew by reducing the vegetable stock and water by half. Serve with rice and French bread.

Irish stew is more commonly made with lamb in Ireland. It's easy to prep and then let it cook slowly until the meat and vegetables are fall-apart tender and the broth is full of flavor. Every Irish household has its own recipe for this comforting dish and this is my mom's. It's perfect on a cold day or on St. Patrick's Day served with a pint of Guinness, of course!
