Crawfish and Corn Soup
This crawfish and corn soup is a staple in several New Orleans restaurants. If you don't like it spicy do not use the Creole seasoning, just add more salt and pepper. Serve with salad and garlic bread. It's easy and delicious!
Grillades
Grillades is a warm and delicious way to use stew beef or chuck roast. I serve it with grits or white rice and crusty bread for dipping.
Cajun-Spiced Sauce
Expand the traditional French velouté sauce into Cajun territory (a cuisine known for its French influences) with the holy trinity—onion, celery, and green bell pepper—plus Cajun seasoning and hot sauce. Serve with shrimp, fried chicken and waffles, or sausage and biscuits.

Very flavorful and simple!
Instant Pot NOLA Red Beans and Rice
This Instant Pot rice and beans made with pork neck bones has been converted from a family recipe that we've used for 40+ years. Our family had come across it while in New Orleans when I was a little girl. From what I remember, red beans and rice were always made at home on Mondays using leftover pork bones from the weekend meals. It's deliciously flavorful and can be made as spicy as you'd like. I hope you love it as much as my own family does.
Cajun Catfish Supreme
I entered this Cajun catfish supreme recipe in a large neighborhood Cajun party contest and won first prize. It is an unusual but delicious way of preparing catfish.
Rice Cooker Crawfish Tails
For those days when you only have a little bit of time and patience to cook, this recipe will fulfill your needs. It combines crawfish, spicy diced tomatoes, and rice for a quick and delicious meal. Serve with garlic bread on side. YUMMY!
Cajun Chicken Ragout
This Cajun chicken ragout is an old, personal favorite recipe of mine. While not totally authentic, it celebrates the fabulous flavors of Cajun cuisine. Serve this thick sauce over rice.
Cindy's Jambalaya
This jambalaya is a tradition here in the South. You can add anything you like to this basic recipe. You can add crawfish and chicken pieces or make it all sausage. Decide what you like and add it in!
Sausage and Oyster Stuffing
This is the stuffing recipe for the turducken. Chicken broth, beer, or water can be used in place of turkey broth.
Cajun Wild Rice
This is a Cajun-inspired gourmet wild rice dish that I created. It's quick and easy, and can even be cooked unattended in a rice cooker!
