Instant Pot Minestrone Soup
This isn't what I would call an authentic or traditional minestrone. It's simply my way of making a hearty minestrone that's amazingly healthy and quick! I prefer not to use salt or pepper in much of my cooking, to allow the flavors of the food to shine through.
Prosciutto Fave Minestrone alla Riso
This ham, bean and rice soup is my favorite and it is a hearty dinner soup. Sprinkle bowls of soup with Parmesan cheese and serve hot. Serve extra cheese at the table. Offer crusty, Italian bread with the soup. You may substitute macaroni for the rice.
Sue's Minestrone
This is a good make-ahead recipe. In fact, I usually let it sit in the fridge for a few days before I reheat it! Feel free to experiment with the mixed vegetables. I use the Italian-style mixed veggies. Serve with warmed foccacia or French bread for dipping.
Bek's Minestrone Soup
The absolute best minestrone I have tasted. A spicy twist on a traditional soup. I make this in large quantities and freeze in 1 cup portions for a fast meal. I sometimes slice and brown a spicy chicken sausage and add it to this soup for my husband who loves meaty soup. Penne pasta or orrichette pasta may be cooked on the side and added at the end!

Green Minestrone
This is the classic and authentic Italian minestrone with a green twist. No tomatoes here! You may brown some pancetta or bacon in olive oil before proceeding with the recipe if you wish. I prefer to use a good quality vegetable bouillon to vegetable broth. The taste is more authentic and you simply need to skip the salt.
Minestrone Soup II
This is a wonderful minestrone soup that 's filled with tons of vegetables. Feel free to add different vegetables or ingredients. Serve with grated Parmesan cheese.
