Black-Eyed Pea Patties
Black-eyed pea patties made with bacon, shallots, and roasted red peppers are pan-fried until golden brown and crispy. This recipe calls for canned peas, but for more flavor, I sometimes use leftover peas that I cooked with ham hocks or smoked turkey from New Year's. Get creative with how you serve them; sometimes I top them with fried green tomatoes or leftover candied yams.
Crawfish Dressing
This crawfish dressing is one of our favorite recipes. It goes great with fried turkey and makes a bunch. A combination of Cajun ingredients makes for a delicious dressing.
Deep-Fried Turkey Marinade
This is a great recipe a friend gave to my father two years ago. It is easy, and allows you to have more room in the oven for other holiday favorites. It is also the most tender turkey I've ever made. This rub is appropriate for a 12 to 14 pound turkey.
Italian Stuffed Pasta Tubes
This Italian stuffed pasta tubes recipe is one I created after tasting something similar at a local restaurant. The stuffed pasta tubes freeze well, allowing dinner to be ready faster. I generally make my pasta tubes and spaghetti sauce from scratch, but to shorten preparation time, manicotti tubes and jarred spaghetti sauce will work, too.
Make-Ahead Sausage and Veggie Bowls
Make weekday lunch-prep a breeze with this sheet pan sausage and veggie meal while cooking up a pot of rice! This is so versatile; you can use different veggies, or use quinoa instead of rice. You can drizzle with Italian dressing or add some hot sauce. The possibilities are endless! Refrigerate for up to 5 days.
Stuffed Shells IV
Wonderful stuffed shells - makes two 9x13 pans full! You can also freeze them on a cookie sheet and have them when company shows up!
Chicken Tetrazzini for a Crowd
If this is too much, make 2 casseroles; eat one, freeze the other. You can also use turkey breast meat. Avanti!
Breakfast Egg Muffins
This breakfast egg cup recipe is a terrific weekday dish that can be made on the weekend since it lasts a week in the fridge. These egg muffins are a great way to add extra veggies to your diet. You can use any meat and change the spices or vegetables.
Greek Traditional Turkey with Chestnut and Pine Nut Stuffing
This is my grandmother's old recipe for a delicious turkey roasted in lemon, orange, and tangerine juice with a stuffing of meat, roasted chestnuts, and pine nuts. An excellent recipe for everybody who loves Greek cuisine.
Easy and Delicious Slow Cooker Cassoulet
I am married to a chef, but I can't cook. So I make a lot of food in my slow cooker when it's my night to cook. We love France and French cooking, and this recipe is a wonderfully simple, elegant cassoulet that even I can make and he loves. Wonderful for cold nights and dinner parties. Double the recipe for leftovers โ it melds overnight very well.
Stuffed Orange Peppers
This orange bell pepper recipe is made with a mixture of ground turkey, onion, tomatoes, rice, and cheese. Make it an appetizer with mini bell peppers to serve at a party. Add some color with whatever you have. Use cilantro, parsley, or any herb to add to the look and taste. Enjoy!
Turkey-Stuffed Peppers
A cheesy roux sauce defines this otherwise bland recipe. This recipe is kid- and diabetic-friendly. Spice it up with red pepper flakes.
