For a winter special occasion or just a weekday meal, this butternut squash soup recipe makes a perfect, warming starter course. The snipped chives and pomegranate garnishes add a festive touch, but you can also use crumbled bacon and a swirl of crème fraiche to top this bisque.
Roasted Butternut Squash Soup with Apples and Bacon
I created this roasted butternut squash soup with apples and bacon recipe on Christmas Eve, which was a huge hit. The caramelized roasted squash gives the soup extra depth of flavor. This soup has a very creamy consistency but is completely dairy-free except for the optional garnish of sour cream (I did this on purpose due to a guest who was allergic to dairy). It is also extremely healthy. Don't shy away from the curry powder; it gives the soup extra flavor. Feel free to play around with the amount of carrot, onion, celery, or garlic to your taste. This soup can be made the day before and reheated.
Vitamix Butternut Squash Soup
I was looking for a great butternut squash soup recipe that was creamy with great flavor. I liked elements of many of the ones out there, but none hit the mark. So, I created my own in the Vitamix! My husband is an extremely picky eater when it comes to food consistency, and he loved it. I hope you do as well. This recipe is now in our regular rotation. Top with paprika and parsley or your desired spice.
