This is a great make-ahead pasta salad loaded with the flavors of Greece!
Ingredients
- 0.5 cups olive oil
- 0.5 cups red wine vinegar
- 1.5 teaspoons garlic powder
- 1.5 teaspoons dried basil
- 1.5 teaspoons dried oregano
- 0.75 teaspoons ground black pepper
- 0.75 teaspoons white sugar
- 2.5 cups cooked elbow macaroni
- 3 cups fresh sliced mushrooms
- 15 cherrys tomatoes , halved
- 1 cup sliced red bell peppers
- 0.75 cups crumbled feta cheese
- 0.5 cups chopped green onions
- 1 can whole black olives , 4 ounce
- 0.75 cups sliced pepperoni sausage , Optional

Gather all ingredients.

Whisk olive oil, vinegar, garlic powder, basil, oregano, black pepper, and sugar together in a large bowl.

Add cooked pasta, mushrooms, tomatoes, red peppers, feta cheese, green onions, olives, and pepperoni. Toss until evenly coated.

Cover, and chill 2 hours or overnight.

Sancocho is Puerto Rican comfort food! This is my mom's recipe that she serves with bread to soak up the delicious flavor. The mix of vegetables and herbs in this stew was influenced by Spanish Canary Island ancestors of some Puerto Rican families, then adjusted to the vegetables available in Puerto Rico, such as corn, pumpkin, and plantains.
