A rich super moist chocolate cake with a chocolate buttercream frosting. This is the best cake in the world!
Ingredients
- 2 cups white sugar
- 1.75 cups all-purpose flour
- 0.75 cups unsweetened cocoa powder
- 1.5 teaspoons baking soda
- 1.5 teaspoons baking powder
- 1 teaspoon salt
- 2 large eggs
- 1 cup milk
- 0.5 cups vegetable oil
- 2 teaspoons vanilla extract
- 1 cup boiling water

Preheat the oven to 350 degrees F (175 degrees C). Grease and flour two 9-inch round cake pans.

Make cake: Stir together sugar, flour, cocoa, baking soda, baking powder, and salt in a bowl.

Add eggs, milk, oil, and vanilla; mix for 3 minutes with an electric mixer. Stir in boiling water by hand.

Pour evenly into the prepared pans.

Bake in the preheated oven until a toothpick inserted into the centers comes out clean, 30 to 35 minutes. Cool for 10 minutes before removing from pans to cool completely.

While cakes cool, make frosting: Cream butter with an electric mixer until light and fluffy. Stir in confectioners' sugar and cocoa alternately with milk and vanilla. Beat to a smooth spreading consistency.

Split the layers of the cooled cake horizontally, cover the top of each layer with frosting, then stack them onto a serving plate.

Frost the outside of the cake with remaining frosting.

Chocolate Puffed-Wheat Squares
I used to make a batch of these every two days for my cafe. They were extremely popular and always sold out. A delicious and light chocolate square that packs well in lunches. I like to make for Halloween treats by simply scattering Reese's pieces over the top and pushing into top of square while still warm in pan. Enjoy!
Potato Pizza
This recipe was born on a night when I hadn't gone grocery shopping, didn't have any tomato sauce or traditional pizza fixins on hand, but I did have a bag of potatoes that needed using. It has become a staple for us since that night (who doesn't love carbs on carbs!?) and has gone through dozens of iterations (with or without meat or fish, adding caramelized onions or roasted garlic as an extra layer, swapping in different types of cheese or omitting the cheese), all of which have been a hit. Because it's so simple, there are tons of things you can add to the mix and have it taste great, but you truly don't need anything other than the potatoes, herbs, and pizza dough. Anything else is just a bonus!
