Thiskelaguen(beef ceviche) is my dad's recipe from Dededo, Guam. This is no-heat cooking; the meat "cooks" in the marinade. Serve over rice.
Ingredients
- 1.5 cups lemon juice , or as needed
- 2 tablespoons soy sauce
- Tabasco to taste
- 2 pounds beef flank steak , very thinly sliced against the grain
- 1 bunch green onions , thinly sliced
Instructions
-
1
Pour lemon juice, soy sauce, and Tabasco into a large, glass bowl. Stir in beef and green onions. Add additional lemon juice if needed to cover the beef.
-
2
Cover the bowl with plastic wrap, and allow to rest at room temperature for 1 hour, until meat turns a grayish-brown color and appears cooked.

This easy peach pie is perfect for using juicy ripe peaches. It's my family's favorite summer dessert and is best eaten fresh.
Slow Cooker Taco Soup with Ranch Dressing Mix
This taco soup recipe is a really good soup that tastes just like tacos. In fact, if you omit the tomato juice, it makes good meat for tacos. It can also be prepared in a pot instead of a slow cooker. Serve with shredded cheese and chips if desired.
Ham and Cheese Croissant Casserole
Perfect for a lazy weekend breakfast, or add a side salad and enjoy this unique and delicious casserole for a weekday lunch or breakfast-for-dinner. This is the ideal size for a small family, but may be easily doubled.
