A quick, simple side dish that is full of flavor. My daughter and I love this way of preparing squash.
Ingredients
- 2 small acorn squashes - peeled , seeded, and cut into 1-inch cubes
- 6 freshs sage leaves , shredded
- 0.5 cups butter , cut in small pieces
- salt and ground black pepper to taste

Put squash in a microwave-safe bowl; add sage. Dot squash with butter pieces; season with salt and pepper. Cover bowl tightly with plastic wrap.

Cook in microwave oven set on High for 5 minutes. Stir squash to coat in melted butter while checking cubes for softness. Replace plastic and continue to cook until completely tender, 2 to 4 minutes.

Mexican Pork and Green Chile Stew
Here's my version of green chile pepper and pork stew, or a traditional Mexican guisado de puerco en chile verde. It is bursting with flavor and is mildly spicy. Serve with hot corn, flour tortillas with butter, or black beans and white rice.
Simple Roasted Butternut Squash
Roasted butternut squash is so good on its own but I like to season it with olive oil, garlic, salt, and pepper. It's also delicious topped with chopped parsley, shaved Parmesan, or toasted pine nuts.
